主要从事生物高分子化合物、发酵食品和生物活性物质方面的研究。作为项目负责人主持上海市科委“科技创新行动计划”项目、上海市地方高校能力建设项目、山东省自然科学基金、上海市博士后基金项目等省部级项目16项,企业委托项目11项。在SCI/SSCI/EI/CSCD/CSSCI学术期刊上发表论文共111篇,出版专著(译著等)5部。
